Agree with all of your "drops" with the possible exception of Erasmus James.
I'm very mixed on this one.
He simply can't stay healthy, but, I just think there is so much there...maybe I'm still blind.
At this point, we are so heavily invested in him that one more year (with ZERO tolerance) might be justified...however, so would dropping him.
I believe alot of the mocks will zero in on Limas Sweed, 6'4" 217 lbs, WR, Texas, to be the Vikes #1 draft pick.
I kinda like the pick.
There is a valid argument not to go here, but, that puts alot of pressure on Allison IMO, also, Sweed is another big target (see Sidney Rice) and an undeniable playmaker.
However, I could see an O-Lineman (like Jeff Otah, 6'5" 339 lbs, OT, Pittsburgh, or Carl Nicks, 6'5" 345 lbs, OT, Nebraska).
Nicks is a mauler in the run game, Otah is a little raw still.
Both are pretty quick and would be potential RT candidates.
Kinda depends if the master plan is to move Cook back to Center eventually...although, he seems to be really improving his play.
O-Line depth is clearly an issue, so, this may make alot of sense.
There are also some decent DE's which will be available at the position we will be drafting.
For example, Lawrence Jackson, 6'4" 266 lbs, DE, USC or Chris Ellis, 6'4 1/2", DE, Virginia Tech.
Personally, I'd like to see a high profile, FA DE signing.
Safety is not an option for the first round, none appear worthy.

As to Cook.
I like his progress as well this year and haven't ruled out the fact that he might be our replacement for Birk.
Only issue I have with that rationale is that he would be a very big C that would kindof inhibit our QB's vision.
By the way, you are aware that he is following the same growth path of our current C don't you?

Draft Malcolm Kelly first round (Rice has a bit more speed, but Malcolm's got unbelievable hands to catch Tjack's dirtballs)
Excellent size, might fall in the draft far enough for Vikes to get b/c of off year.
Draft a S or DE 2nd round.
