    Pepperoni

I was at the Iowa State Fair a few years ago and ran across the big boars.
I asked the farmer what they do with these and he said once they get that big the only thing they can make with them is pepperoni.
So, think of this the next time you dive into a pepperoni pizza.

“The Big Pig,” this year topping the scales at a whopping 1800 lbs.

Guess what they put in hotdogs

    Byproducts, Variety Meats
"Frankfurter, Hot Dog, Wiener, or Bologna With Byproducts" or "With Variety Meats" are made according to the specifications for cooked and/or smoked sausages (see above), except they consist of not less than 15% of one or more kinds of raw skeletal muscle meat with raw meat byproducts. The byproducts (heart, kidney, or liver, for example) must be named with the derived species and be individually named in the ingredients statement.

I was talking to the caterer for an event I was at last night and he also owns a butcher shop.
He said he never buys ground meat, only grinds it himself, because you never know what's in there.
He had some good stories about different places he has worked.
The best bet in the states is to go with the USDA ratings...the are the most dependable.

Gotta agree with ya there Proph.

My father owns a custom slaughter/buther shop up in Northern Minnesota.

Anyway, he went on a tour of a meat packing company one time. He brought back some very interesting stories related to hotdogs and bolony.
    Whew.
    ;D

Can't beat his homemade sausages and beef/pork sticks.

No I don't. I don't think I have ever had testicle. But if I had I guess it has been good.

What doesn't kill you make you stronger.

I'm not sure if I ever had boar testicles, probably though.
They are probably thrown into those red hotdogs that the Danish made famous.
