This is an easy question:
Cy Young's 511 career pitching wins.
Any other record you want to point to (for example, Vikingivan's mention of Wilt's 100-point game) could be beaten in the correct circumstance.
511 wins over a 20-year-career equates to AVERAGING 25 wins a season.
And they'd still be short 11 wins.
Since most starting pitchers in the modern era make 32-34 starts/season, there's no way this will be broken.

Do steroids help you hit a baseball?? Who knows....
What it absolutely did do is prolong his career by 5+ seasons. It allowed him to cheat father time.

If Ken Griffey, Jr. can stay healthy (a huge question mark), he can break the 755 within 5 seasons.  Griffey currently sits at 584 at age 37.  If we assume he can hit 600 by the end of this season (16 more in the 2nd half) then that's 155 in 5 seasons - 31/year.  Not unreasonable.

And I haven't even brought up ARod, who's at 492 HRs at age 31.  Project out this season to 56 HRs (he has 28 right now through 73 games) and he ends 2007 with 520.  Thus, between now and age 40, he'd need 236 HRs to beat the record.  Over 8 seasons, that's 29.5 HRs/season.  Considering that he's averaged 44 HRs/162 season, that mark is entirely within his grasp - as is 800 HRs, for that matter.

I have to agree with Zeus.
All the rest could be broken, probably won't be, but there is a chance.
There is not a chance for another pitcher to win 511 games.
