There are a bunch of websites you can use. I'm not too sure about books but you can get tutorials off of the internet. Just search for "Beginner Photoshop Tutorials". That should work.

I really like the Kelby - Photoshop for Digital Photographers
There are other books out there that are more for graphics and art but I don't know any off hand try amazon or your Barnes and Nobles.
It will give you basics, that will help give you a better rounded knowledge about photoshop.
The web tutorials that PPE suggested are just as good. I like the physical reference though. It never hurts to have on book sitting around.
Get the "Photoshop classroom in a book" for the Photoshop program you have (7.0,cs2) it gives you lessons to practice the different functions of the program step by step. I used it and it was great!

Photoshop can indeed be fun, best investment I ever made.
A good website to go to is www.good-tutorials.com josdin00 recommends it a lot and it has everything from the beginner to the pro - lots of good bits and pieces !

Go to Half Priced books or any 2nd hand magazine store and they will have it for about $2.
That is where I get my books.
